Mutton meat on bone <br />1 tbsp. Lemon Juice <br />Salt to taste <br />1 tsp. Garam Masala Powder <br /> <br />For Tempering:- <br />5 tbsp. Ghee <br />2 Bay Leaves <br />2-inch stick Cinnamon <br />2 Black Cardamoms <br />4 Green Cardamoms <br /> <br />For Paste:- <br />1 cup Plain Yogurt <br />1 tsp. Asafoetida <br />3 tbsp. Kashmiri Chilli Powder <br />2 tbsp. Ginger powder <br />1 tbsp. Fennel powder <br /> <br />Water as required <br /> <br /> <br />Method:- <br />- In a bowl marinate the mutton by adding salt and lemon juice for 30 minutes. <br />- Heat a pan and melt ghee in it. <br />- Add bay leaf, black cardamom, cinnamon, green cardamom and the marinated mutton. <br />- Sear the meat until golden brown in colour. <br />- In another bowl mix the paste ingredients together with a whisk. <br />- Add this mixture to the seared mutton and mix thoroughly. <br />- Sear on high flame for 2-3 minutes. <br />- Add water and cover with a lid.
